👩🍳 Instructions
1️⃣ Make the Sponge Cake
-
Preheat oven to 350°F (175°C).
-
Beat eggs and sugar until thick and pale (about 5–7 minutes).
-
Gently fold in flour and baking powder, then vanilla.
-
Pour into a greased 9-inch round pan.
-
Bake 20–25 minutes or until a toothpick comes out clean.
-
Let cool completely.
2️⃣ Make the Custard
-
In a saucepan, heat milk until warm.
-
In a bowl, whisk sugar, cornstarch, and egg yolks until smooth.
-
Gradually whisk in warm milk.
-
Return to saucepan and cook over medium heat, stirring constantly until thickened.
-
Remove from heat and stir in butter and vanilla.
-
Cool completely (cover to prevent skin forming).
3️⃣ Make the Chocolate Ganache
-
Heat cream until just boiling.
-
Pour over chopped chocolate. Let sit 2–3 minutes, then stir until smooth.
4️⃣ Assemble the Layers
-
Slice sponge cake horizontally to create 2–3 layers.
-
Place the first layer on a serving plate. Spread custard evenly.
-
Add the next sponge layer, then custard again.
-
Top with the final sponge layer. Pour chocolate ganache over the top, letting it drip down the sides.
-
Chill for at least 1–2 hours to set.
5️⃣ Optional Decoration
-
Top with whipped cream, berries, or chocolate shavings.
💡 Tips for Extra Magic
-
Use a serrated knife to slice sponge evenly.
-
Chill custard completely before layering so it doesn’t run.
-
For a richer touch, add a splash of liqueur (like coffee or orange) to the custard.
This cake is soft, creamy, chocolatey, and perfect for celebrations — every bite is like a little hug. 🤎
I can also make a faster, no-bake layered version that uses store-bought sponge or ladyfingers if you want it quicker.
