Pot Roast with Mashed Potatoes
Ingredients
For the pot roast:

3–4 lb chuck roast

Salt and black pepper, to taste

2 tbsp olive oil

1 large onion, sliced

3 cloves garlic, minced

4 cups beef broth

1 tbsp Worcestershire sauce

4 carrots, peeled and cut into chunks

3–4 potatoes, cut into chunks (optional, or serve with mashed potatoes)

For the mashed potatoes:

2 lbs potatoes, peeled and cut into chunks

4 tbsp butter

½ cup milk (adjust for creaminess)

Instructions
1. Sear the roast

Pat roast dry and season generously with salt and pepper.

Heat olive oil in a large Dutch oven over medium-high heat.

Sear roast on all sides until browned (about 3–4 minutes per side). Remove and set aside.
2. Build the flavor

Add onions and garlic to the same pot; sauté 2–3 minutes until softened.

Deglaze with a splash of beef broth, scraping up browned bits.
3. Cook the roast

Return the roast to the pot.

Add remaining broth, Worcestershire sauce, bay leaves, thyme/rosemary.

4. Add vegetables
