Soft & Fluffy Brioche Buns

Ingredients

3¼ cups all-purpose flour

2¼ tsp instant yeast (1 packet)

3 tbsp sugar

1 tsp salt

3 large eggs, room temperature

⅓ cup warm milk (not hot)

½ cup unsalted butter, very soft

1 egg + 1 tbsp milk (for egg wash)
Instructions

Mix dry ingredients
In a bowl, combine flour, yeast, sugar, and salt. -
Add wet ingredients
Mix in eggs and warm milk until a sticky dough forms. -
Knead & add butter
Knead 8–10 minutes (by hand or mixer).
Gradually knead in butter until smooth, elastic, and slightly tacky. -
First rise
Place dough in a greased bowl, cover, and let rise 1–1½ hours until doubled. -
Shape buns
Divide into 8 equal pieces. Roll into smooth balls and place on a lined baking sheet. -
Second rise
Cover loosely and let rise 45–60 minutes until puffy. -
Bake
Preheat oven to 375°F (190°C).
Brush with egg wash.
Bake 15–18 minutes until golden brown. -
Cool
Let cool slightly before slicing.
