Crockpot French Onion Meatloaf
Ingredients

2 lbs ground beef (80/20 works best)

1 packet French onion soup mix

1 cup breadcrumbs (or panko)

2 eggs
-
½ cup milk
-
1 tbsp Worcestershire sauce

1 cup caramelized onions (or 1 large onion, thinly sliced)

1 cup shredded mozzarella or Swiss cheese (optional but great)

Salt & pepper (light—soup mix is salty)
Optional Topping

1 cup beef broth
-
1 tbsp cornstarch (for gravy, optional)
Instructions
1️⃣ Mix meatloaf
In a large bowl, gently mix ground beef, soup mix, breadcrumbs, eggs, milk, Worcestershire, onions, and cheese.
2️⃣ Shape & place
Shape into a loaf and place on a foil sling or parchment in the crockpot.
3️⃣ Cook
Cover and cook:

LOW: 6–7 hours

HIGH: 3–4 hours
Until internal temp reaches 160°F (71°C).
4️⃣ Optional gravy
Pour juices into a saucepan, add cornstarch slurry, and simmer until thick.
5️⃣ Rest & serve
Let meatloaf rest 10 minutes before slicing.
