Taco Bell Enchirito (Homemade)
Ingredients
Filling

1 lb ground beef

1 packet taco seasoning

½ cup water

1 cup refried beans
Enchilada Sauce

1½ cups red enchilada sauce (canned or homemade)
Assembly

6 large flour tortillas

1½ cups shredded cheddar or Colby-Jack cheese

¼ cup diced white onion
Instructions
1. Cook the Beef

Brown ground beef in a skillet over medium heat.

Drain excess fat.

Add taco seasoning and water.

Simmer 5 minutes until thickened.

Stir in refried beans until well combined.
2. Assemble the Enchiritos

Warm tortillas so they’re soft.

Spoon beef-bean mixture down the center of each tortilla.

Roll up burrito-style and place seam-side down in a baking dish.
3. Sauce & Cheese

Pour enchilada sauce evenly over the rolled tortillas.
