Alice Springs Chicken 🍗🧀
Ingredients

2–4 boneless, skinless chicken breasts

Salt & pepper

6–8 slices bacon, cooked

1 cup mushrooms, sliced

1½–2 cups shredded Colby Jack (or cheddar/jack mix)
Honey Mustard Sauce

¼ cup Dijon mustard
-
¼ cup honey
-
¼ cup mayonnaise
Instructions

Mix the sauce:
Stir mustard, honey, and mayo until smooth. Set aside. -
Cook chicken:
Season chicken with salt & pepper. Sear in a skillet with a little oil, 4–5 minutes per side, until nearly cooked through. -
Cook mushrooms:
Sauté mushrooms in the same pan until tender. -
Assemble:
Place chicken in a baking dish. Spoon honey mustard over each piece.
Top with mushrooms, bacon, and cheese. -
Bake:
Bake at 375°F (190°C) for 10–15 minutes, until cheese is melted and bubbly.
Serve with
Mashed potatoes, green beans, or that garlic butter flatbread you were talking about 👀
