🌽 Fried Cornbread
Ingredients

1 cup cornmeal

½ cup all-purpose flour

2 tbsp sugar (optional, for slight sweetness)

1 tsp baking powder

½ tsp salt

1 large egg

¾ cup milk (or buttermilk for tang)

2–3 tbsp melted butter or oil

Oil for frying (vegetable, canola, or peanut)
Instructions

Make batter:

In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.

In another bowl, whisk egg, milk, and melted butter.

Combine wet and dry ingredients until smooth.

Heat oil:

Pour ~½ inch oil into a skillet over medium heat. Let it get hot but not smoking.

Fry cornbread:

Spoon batter into the skillet, forming small rounds or dollops.

Cook 2–3 minutes per side until golden brown and crispy.

Drain:

Remove to paper towels to drain excess oil.

Serve warm with butter, honey, or alongside your favorite chili or beans.
