Chicken Mango Avocado Salad

Ingredients
Salad

2 cups cooked chicken breast, sliced or diced (grilled or rotisserie)

1 ripe mango, peeled & diced

1–2 ripe avocados, diced

4 cups mixed greens (romaine, spinach, or spring mix)

1/4 red onion, thinly sliced

Optional: cherry tomatoes or cucumber
Dressing

3 tbsp olive oil

Juice of 1 lime (or lemon)

1 tsp honey or maple syrup

1/2 tsp Dijon mustard (optional, but great)

Salt & black pepper to taste
Instructions

Make the dressing:
Whisk olive oil, lime juice, honey, Dijon, salt & pepper until smooth. -
Assemble salad:
In a large bowl, add greens, chicken, mango, avocado, red onion, and any extras. -
Dress & toss:
Drizzle dressing over salad and gently toss to coat. -
Serve immediately for the freshest flavor.
