🌽🥔 5-Ingredient Winter Corn & Potato Chowder
Ingredients
-
2 cups corn kernels (fresh, frozen, or canned)
-
2 medium potatoes, peeled and diced
-
1 small onion, chopped
-
4 cups chicken or vegetable broth
-
1 cup milk or cream
Optional: salt & pepper to taste, fresh herbs for garnish
Instructions
-
Cook the aromatics
In a large pot, sauté onion in a little butter or oil until soft and fragrant (2–3 minutes). -
Add potatoes and broth
Add diced potatoes and broth. Bring to a boil, then simmer 10–15 minutes until potatoes are tender. -
Add corn
Stir in corn kernels and simmer another 5 minutes. -
Blend slightly
Use an immersion blender to gently mash some of the potatoes and corn — this gives a creamy, thick texture without needing flour or cream. Leave some chunks for bite. -
Finish with milk/cream
Stir in milk or cream. Heat gently, do not boil, just until warm. -
Season & serve
Add salt & pepper to taste. Garnish with parsley or chives if you like.
Tips & Variations
-
For extra richness, use half-and-half or full cream.
-
Add bacon bits or cheddar cheese for a twist.
-
For vegan, use coconut milk or cashew cream and vegetable broth.
