🥩 Short Ribs with Greens, White Rice & Gravy
Ingredients
For Short Ribs

3–4 lbs beef short ribs

Salt & black pepper
-
2 tbsp olive oil
-
1 onion, chopped
-
2 cloves garlic, minced
-
2 cups beef broth
-
1 cup red wine (optional, can use more broth)

2 sprigs thyme or 1 tsp dried thyme
-
1 bay leaf
For Gravy
-
Pan drippings from short ribs
-
2 tbsp flour
-
Extra beef broth if needed
For Greens
-
1 lb collard, mustard, or kale, washed & chopped
-
1 tbsp olive oil or bacon grease
-
1 small onion, chopped
-
1 clove garlic, minced
-
½ cup chicken or vegetable broth
-
Salt & pepper
For White Rice

2 cups long-grain white rice
-
4 cups water or broth
-
Pinch of salt
Instructions
1. Cook Short Ribs
-
Preheat oven to 325°F (165°C).
-
Season short ribs with salt and pepper.

Heat oil in a large oven-safe pot or Dutch oven. Sear ribs 2–3 minutes per side until browned. Remove and set aside.

Sauté onion and garlic in the same pot for 2 minutes.

Deglaze with red wine (or a splash of broth), scraping up browned bits.

Add ribs back, beef broth, thyme, and bay leaf. Cover.

Braise in oven for 2½–3 hours until meat is tender.
2. Make Gravy

Remove ribs and keep warm.

Strain pan liquid into a saucepan.
-
Whisk 2 tbsp flour into the liquid over medium heat.

Cook 3–5 minutes until thickened, adding extra broth if needed.
3. Cook Greens
-
Heat oil or bacon grease in a skillet.
-
Sauté onion & garlic until soft.
-
Add chopped greens and broth.
-
Cover and cook 10–15 minutes until tender. Season with salt and pepper.
4. Cook White Rice
-
Rinse rice under cold water.
-
Bring water or broth + pinch of salt to a boil.
-
Add rice, reduce heat to low, cover, and simmer 18–20 minutes until fluffy.
5. Serve
-
Plate rice, top with braised short ribs, pour gravy over meat.

Add greens on the side.
Tips
-
Use bone-in short ribs for maximum flavor.
-
Greens taste even better if cooked low and slow with a bit of smoked meat or bacon.

Gravy can be made richer by whisking in a small pat of butter at the end.
