Classic Peanut Brittle
Ingredients

1 cup sugar

½ cup light corn syrup

¼ cup water
-
1½ cups roasted peanuts (salted or unsalted)

2 tbsp butter
-
1 tsp vanilla extract
-
1 tsp baking soda
-
¼–½ tsp salt (to taste)
Prep First (Important!)

Line a baking sheet with parchment or grease it well

Measure baking soda and vanilla together (you’ll need them fast)

Have a heatproof spatula ready
Instructions

Cook the sugar

In a heavy saucepan, combine sugar, corn syrup, and water

Cook over medium heat, stirring until sugar dissolves

Stop stirring and cook until syrup turns deep amber (300°F / hard crack stage)

Add peanuts & butter
-
Stir in peanuts and butter
-
Cook 1–2 minutes until fragrant

Finish fast
-
Remove from heat

Immediately stir in vanilla + baking soda (it will foam—this is good!)

Pour onto prepared baking sheet

Spread
-
Quickly spread thin with spatula

Let cool completely (about 20 minutes)

Break
-
Snap into pieces once fully hardened

Don’t walk away—brittle goes from perfect to burnt fast

Baking soda makes it light and airy

For thinner brittle, tilt the pan instead of spreading
Variations

Spicy: add cayenne or chili powder

Honey brittle: replace half the corn syrup with honey

Chocolate-dipped: drizzle melted chocolate after cooling

Nut swap: almonds, cashews, pecans all work
