Cabbage Roll Soup
Ingredients

1 lb ground beef or ground turkey

1 tbsp olive oil

1 small onion, chopped

2 cloves garlic, minced

4 cups green cabbage, chopped

2 carrots, sliced

1 (28 oz) can crushed tomatoes

4 cups beef or chicken broth

1 tsp paprika

1 tsp salt (adjust to taste)

½ tsp black pepper

1 tsp dried oregano or thyme

½–1 cup cooked rice (white or brown)
Instructions

Heat oil in a large pot over medium heat.

Add onion and cook until soft (3–4 minutes). Add garlic, cook 30 seconds.

Add ground meat and cook until browned. Drain excess fat if needed.

Stir in cabbage, carrots, tomatoes, broth, and seasonings.
