🧅🧀 Cheesy Bacon Stuffed Onions
Ingredients

4 large sweet onions (Vidalia or yellow)

8 slices bacon, cooked & crumbled

1 cup shredded cheddar (sharp is best)

½ cup shredded mozzarella or Monterey Jack

¼ cup cream cheese, softened

2 tbsp butter, melted
-
1 clove garlic, minced
-
Salt & black pepper

Instructions

Prep the onions
Preheat oven to 375°F (190°C).
Cut onions in half crosswise. Peel.
Scoop out centers, leaving 2–3 outer layers intact. Chop scooped onion. -
Parboil
Boil onion halves in salted water 5–7 minutes until slightly tender. Drain well. -
Make the filling
Mix bacon, chopped onion, cheddar, mozzarella, cream cheese, butter, garlic, salt, pepper, and any extras. -
Stuff
Arrange onion halves in a baking dish.
Fill generously with the cheese-bacon mixture. -
Bake
Cover loosely with foil and bake 20 minutes.
Uncover and bake 10–15 minutes more until bubbly and golden.
