Crust

1½ cups graham cracker crumbs

16 oz (450 g) cream cheese, softened

½ cup heavy cream or sour cream
Instructions
1. Prepare the crust

Preheat oven to 325°F (160°C).

Mix graham crumbs, sugar, and melted butter.

Press into the bottom of a greased 9-inch springform pan.

Bake 10 minutes, then cool.
2. Make raspberry sauce

Simmer raspberries, sugar, and lemon juice for 5–7 minutes until thick.

Strain seeds if desired. Cool completely.
3. Cheesecake filling

Beat cream cheese and sugar until smooth.

Mix in melted white chocolate and vanilla.

Add eggs one at a time, mixing gently.

Stir in cream or sour cream.
4. Assemble

Pour filling over cooled crust.

Spoon raspberry sauce on top and swirl gently with a knife.
5. Bake

Bake at 325°F (160°C) for 50–55 minutes

Center should jiggle slightly

Turn oven off, crack door, cool inside for 1 hour
6. Chill
Refrigerate at least 4 hours or overnight before serving.
