Ingredients

1 unbaked 9-inch pie crust

1½ cups sweetened shredded coconut

1 cup sugar

½ cup (1 stick) butter, melted

2 large eggs

½ cup milk

1 tbsp all-purpose flour

1 tsp vanilla extract

¼ tsp salt
Instructions

Preheat oven to 350°F (175°C).

Fill crust
Sprinkle shredded coconut evenly into the unbaked pie crust. -
Mix filling
In a bowl, whisk sugar, melted butter, eggs, milk, flour, vanilla, and salt until smooth. -
Assemble
Pour mixture over the coconut. Do not stir—the coconut will rise naturally. -
Bake
Bake for 45–50 minutes, until golden on top and set in the center. -
Cool
