Fried Potatoes, Onions & Smoked Polish Sausage
Ingredients

1 lb smoked Polish sausage (kielbasa), sliced into rounds

4 medium potatoes, diced or sliced

1 large onion, sliced

2–3 tablespoons oil or butter

Salt & black pepper to taste

Optional seasonings: garlic powder, paprika, or Old Bay
Instructions

Cook the Potatoes

Heat oil or butter in a large skillet over medium heat.

Add potatoes, season lightly with salt.

Cover and cook 8–10 minutes, stirring occasionally, until starting to soften.

Add Sausage
-
Add sliced kielbasa to the skillet.

Cook 5–7 minutes, stirring, until sausage is browned and potatoes are golden.

Add Onions
-
Add sliced onions and optional seasonings.

Cook uncovered 5–8 minutes, stirring occasionally, until onions are soft and caramelized.

Finish

Taste and adjust salt and pepper.

Let sit undisturbed for a minute for extra crisp edges.

Use a large skillet so everything browns, not steams

Parboil potatoes 3–4 minutes first for extra crispiness

Smoked sausage is already cooked—just brown it well
