Loaded Cowboy BBQ Tater Tot Nachos
Ingredients

1 (32 oz) bag frozen tater tots
Meat

1 lb ground beef (or pulled pork/brisket)

1 tsp chili powder

½ tsp smoked paprika

½ tsp garlic powder

Salt & pepper

½ cup BBQ sauce (sweet & smoky works best)
Toppings

2 cups shredded cheddar or Colby-Jack

½ cup cooked bacon, crumbled

¼ cup red onion, diced
-
Pickled jalapeños (optional but bold)

Green onions
Drizzles

Ranch or chipotle ranch

Extra BBQ sauce
Instructions

Bake tots:
Cook tater tots according to package directions until extra crispy (flip halfway). -
Cook meat:
Brown beef with seasonings. Drain grease. Stir in BBQ sauce and warm through. -
Assemble:
Spread crispy tots on a sheet pan.
Top with BBQ meat, cheese, bacon, onions, and jalapeños. -
Melt:
Return to oven at 400°F / 205°C for 5–8 minutes, until cheese melts. -
Finish:
Drizzle with ranch and BBQ sauce. Add green onions.
