No-Bake Éclair Cake (Classic & Easy)
This is the popular creamy, no-bake dessert that tastes just like a chocolate éclair.
Ingredients
- 1 box (3.4 oz) instant vanilla pudding mix
- 2 cups cold milk
- 1 container (8 oz) whipped topping (Cool Whip), thawed
- 1 box graham crackers
- 1 container chocolate frosting or chocolate ganache (see option below)
Instructions
- In a bowl, whisk pudding mix and milk until thick.
- Gently fold in whipped topping.
- In a 9×13 dish, place a single layer of graham crackers.
- Spread half of the pudding mixture over crackers.
- Add another layer of graham crackers.
- Spread remaining pudding mixture on top.
- Finish with a final layer of graham crackers.
- Microwave frosting for 15–20 seconds and spread evenly on top.
- Refrigerate at least 4 hours, preferably overnight, before serving.
Chocolate Ganache Option
- Heat ½ cup heavy cream until hot (not boiling).
- Pour over 1 cup chocolate chips, let sit 2 minutes, then stir smooth.

- Let it chill overnight for best “éclair” texture.
- Use chocolate graham crackers for extra flavor.
- Slice with a sharp knife for clean layers.
