Ingredients
Crust
- 2 cups graham cracker crumbs

- 1 cup cold heavy whipping cream

- 2 cups fresh strawberries, chopped
- ⅓ cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch + 2 tbsp water
How to Make It
1. Make the crust
Mix graham crumbs, sugar, and melted butter. Press firmly into the bottom of a springform pan (or pie dish). Chill for 20–30 minutes.
2. Whip the filling
Beat cream cheese until smooth. Add powdered sugar and vanilla.
In a separate bowl, whip the cream to stiff peaks, then gently fold it into the cream cheese mixture.
3. Assemble
