Sausage, Green Bean & Potato Casserole
Ingredients

1 lb smoked sausage (kielbasa or andouille), sliced

1½ lbs baby potatoes, halved (or regular potatoes, chopped)

1 lb fresh green beans, trimmed (or 2 cans, drained)

1 small onion, sliced (optional but 🔥)

3 tbsp olive oil or melted butter

3 cloves garlic, minced
-
1 tsp smoked paprika
-
1 tsp Italian seasoning (or thyme)

Salt & black pepper, to taste

Optional upgrades: red pepper flakes, shredded cheese, cream of mushroom soup
Instructions

Preheat oven to 400°F (205°C).

Parboil potatoes for 8–10 minutes until just barely tender. Drain.

In a large bowl, toss potatoes, green beans, sausage, and onion with oil/butter, garlic, and seasonings.

Spread everything evenly in a greased casserole dish or sheet pan.

Cover with foil and bake 30 minutes.

Uncover and bake another 15–20 minutes until potatoes are golden and sausage is nicely browned.

Taste, adjust seasoning, and serve hot.

Creamy version: Stir in 1 can cream of mushroom soup + ½ cup milk before baking

Cheesy: Add shredded cheddar or mozzarella for the last 10 minutes
