Steak, Shrimp, Roasted Potatoes & Asparagus – Quick Dinner

Ingredients
Potatoes

1 lb baby potatoes or Yukon gold, cut into chunks

Shrimp

1 lb large shrimp, peeled & deveined

Asparagus

1 bunch asparagus, trimmed

1 tbsp olive oil

Steak

2 steaks (ribeye, strip, or your choice), 1–1.5 in thick

Salt & pepper

1–2 tsp olive oil or butter for searing

Instructions
1. Roast the Potatoes

Preheat oven to 400°F (200°C).

Toss potatoes with olive oil, garlic powder, paprika, salt & pepper.

Spread evenly on a baking sheet. Roast 30 min, flipping halfway through.
2. Prep the Shrimp & Asparagus

Shrimp: Toss with olive oil, paprika, garlic powder, salt & pepper.

Asparagus: Toss with olive oil, salt & pepper.

When potatoes have 10–12 minutes left, add asparagus to the same pan or a separate pan.

When potatoes have 8–10 minutes left, add shrimp to the pan (shrimp cooks fast).
3. Cook the Steak

Pat steak dry and season generously with salt & pepper.

Heat 1–2 tsp oil in a skillet over medium-high heat.

Sear steak 3–5 min per side depending on thickness and desired doneness:

Rare: 120–125°F

Medium rare: 130–135°F

Medium: 140–145°F

Optional: Add a clove of garlic and fresh herbs to the pan during the last 1–2 minutes for extra flavor.

4. Serve

Tips for Timing

Potatoes take longest → start them first.
