Sweet Potato Pie
Ingredients

1 unbaked 9-inch pie crust

2 cups mashed cooked sweet potatoes (about 2 medium)

½ cup granulated sugar

½ cup brown sugar
-
½ cup evaporated milk
-
2 eggs
-
¼ cup melted butter
-
1 teaspoon vanilla extract

1 teaspoon cinnamon
-
½ teaspoon nutmeg

¼ teaspoon salt
Instructions

Preheat oven to 350°F (175°C).

Prepare sweet potatoes:

Boil or bake until tender, then peel and mash until smooth.

Mix filling:

In a bowl, combine sweet potatoes, sugars, evaporated milk, eggs, butter, vanilla, cinnamon, nutmeg, and salt. Mix until smooth.

Fill crust:

Pour filling into the unbaked pie crust.

Bake:

Bake for 45–55 minutes, until the center is set and a knife comes out mostly clean.

Cool & serve:

Let cool completely before slicing.

For extra smooth filling, blend the mixture.
